Ingredients
- 1 pound cubed or minced pork stew meat
- 1 (1.25 ounce) package taco seasoning mix
- 1 tablespoon vegetable oil
- 1 (16 ounce) can chili beans, undrained
- 1 cup chunky salsa
- 1/3 cup apricot preserves
- 12 taco shells
- 1 (10 ounce) can sliced ripe olives, for topping
Instructions
1
Combine the pork and taco seasoning in a resealable plastic bag; mix well to coat the meat evenly
2
. Seal the bag and shake it vigorously to ensure the seasoning is distributed uniformly throughout the pork.
3
Next, heat a generous amount of oil in a large skillet over medium-high heat. Add the pork to the skillet and cook, stirring occasionally, until it reaches a safe internal temperature and is no longer pink.
4
Once the pork is cooked, stir in the beans, salsa, and apricot preserves to create a delicious mixture. Reduce the heat to low and let it simmer for about 10 minutes, allowing all the flavors to meld together.
5
To assemble the tacos, spoon approximately 1/3 cup of the pork mixture into each taco shell. Finally, top each taco with a few slices of olives to add some salty flavor and texture
