  • 1 pound Mexican chorizo sausage, casings removed
  • 1 cup diced onion
  • 1 cup diced celery
  • 1 1/4 cups water
  • 1/4 cup butter
  • 1 (6 ounce) package dry bread stuffing mix

Combine the spicy Spanish sausage, or chorizo, sliced onion and diced celery in a large cooking vessel over medium heat.

Cook and stir constantly, fragmenting the chorizo with a spoon until it reaches a rich brown color and the vegetables are tender, approximately 7 to 9 minutes.

Transfer the mixture to a large serving container.

Add water to the same cooking vessel; bring it to a rolling boil.

Add a pat of butter to the boiling water and let it dissolve completely. Stir in the prepared stuffing blend, remove from heat, and cover with a lid to trap the moisture.

Allow the mixture to absorb the liquid for about 5 minutes, allowing it to become fully saturated.

Combine the cooked chorizo mixture with the prepared stuffing blend and stir until everything is well incorporated.
