Spicy Chorizo Black Bean Chili
Ingredients
  • 1 tablespoon extra-virgin olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 (4 ounce) links Mexican chorizo sausage, sliced
  • 1 (15 ounce) can black beans, drained
  • 1 (14.5 ounce) can diced tomatoes with oregano and basil
  • 1 (14 ounce) can whole kernel corn, drained
  • 1 (6 ounce) can tomato paste
  • 1 medium bell pepper, chopped
  • 1 pinch chipotle chile powder, or to taste
Instructions
1
Preheat the cooking vessel with oil over a moderate to high heat level. Introduce the onion and garlic into the pot, allowing them to soften and become transparent in appearance, taking approximately 5 minutes to achieve this state.
2
Concurrently, cook the chorizo in a separate cooking vessel over a moderate to high heat level until it is evenly browned on all sides, taking about 5 minutes. Transfer the cooked chorizo to the pot with the onions and combine with other ingredients.
3
Add black beans, diced tomatoes, corn, tomato paste, bell pepper, and chile powder to the pot. Stir all the components together and bring the mixture to a gentle simmer.
4
Transfer the entire mixture to a slow cooker and cook over low heat for 6 hours or high heat for 3 hours.
