Ingredients
- 1/2 pound chorizo sausage, chopped
- 1/4 cup olive oil
- 2 carrots, chopped
- 1 cup chopped onion
- 5 stalks celery, chopped
- 5 tomatoes, chopped
- 3 small potatoes, peeled and chopped
- 3 quarts chicken broth
- 1 1/2 tablespoons cayenne pepper
- 1 (15 ounce) can kidney beans, drained
- 1/2 cup tomato paste
- salt and pepper to taste

Begin by placing the sausage in a substantial, deep pan on your stovetop. Heat it over an elevated heat setting until the sausage is uniformly browned on all sides. Remove from heat, break it into smaller pieces and set aside for later use.

Next, heat a suitable amount of oil in a substantial container on your stovetop over an elevated heat setting. Add the carrots, onion, and celery; stir them gently for 2 to 3 minutes. Introduce the tomatoes, potatoes, kidney beans and chicken broth into the pan; bring the mixture to a rolling boil by increasing the heat. Stir in some cayenne pepper and tomato paste at this stage to add depth to your dish. Gradually decrease the heat and let it simmer for 20 minutes, allowing all the flavors to meld together. Add the previously set-aside sausage and season with salt and pepper according to your personal taste preferences. Serve the dish hot, garnished with a sprinkle of your favorite herbs if desired.
