  • 1 1/2 shallots, finely chopped
  • 6 cloves garlic, finely chopped
  • 6 whole star anise pods
  • 2 teaspoons ground cinnamon
  • 3/4 cup red pepper flakes
  • 1 (1 1/2 inch) piece ginger, or more to taste, peeled and finely chopped
  • 2 tablespoons soy sauce
  • 2 teaspoons white sugar
  • 1 teaspoon shiitake mushroom powder
  • 1/2 teaspoon salt

Heat the oil in a medium-sized saucepan over an average heat setting until it starts to warm up. Add the sliced shallots, minced garlic, whole star anise, and ground cinnamon to the saucepan. Continue heating, gently stirring the mixture occasionally, until the garlic and shallots develop a rich brown color, approximately 20 minutes.

In another container, combine the dried red pepper flakes, grated ginger, soy sauce, granulated sugar, mushroom powder, and salt. Mix these ingredients thoroughly until well combined.

Carefully pour the mixture of cooked shallots and garlic through a fine-mesh strainer into the bowl containing the red pepper flake mixture. Allow the garlic and shallot pieces to cool down slightly, then gently stir them back into the oil mixture. Discard the star anise pod.

Transfer the infused oil to a sealed glass container and refrigerate until you are ready to use it.
