  • 6 eggs, lightly beaten
  • 2 teaspoons salt
  • 1 (7.75 ounce) can Mexican style hot tomato sauce
  • 1/2 cup water
  • 1/2 cup shredded Monterey Jack cheese

Preheat a substantial, thick-bottomed pan over high heat to 350 degrees F (175 degrees C). Sear tortillas and onion in the hot oil until they become crispy and golden, constantly stirring to prevent burning. Transfer them to a plate lined with paper towels to remove excess oil.

Dispose of the remaining oil in the pan, leaving behind a thin film.

Set the pan over a moderate temperature. Reintroduce fried tortillas and onion into the pan, then incorporate beaten eggs; add a pinch of salt to taste. Cook and stir until the eggs become solid.
