Spicy Chicken Ramen with Bok Choy
Ingredients
  • 6 cups chicken broth
  • 1 bunch green onions, sliced
  • 4 cups chopped bok choy
  • 1 small carrot, cut into 1/4-inch dice
  • 1 small stalk celery, cut into 1/4-inch dice
  • 1/4 cup soy sauce
  • 2 tablespoons ginger root, peeled and minced
  • 1 tablespoon creamy peanut butter
  • 2 teaspoons sriracha sauce
  • 3 cloves garlic, minced
  • 1 teaspoon white sugar
  • 1 (12 ounce) package ramen noodles
  • 1 cup chopped cooked chicken
Instructions
1
Heat chicken broth in a large stockpot over medium heat, stirring occasionally until it reaches a rolling boil. Add chopped green onions and let the mixture simmer for 1 to 2 minutes, allowing the flavors to meld together.
2
Reduce heat to a low simmer and add an assortment of vegetables, including bok choy, carrot, celery, soy sauce, grated ginger, peanut butter, sriracha, minced garlic, and sugar. Continue to cook until the vegetables are tender, approximately 10 minutes.
3
Prepare a separate pot of salted water and bring it to a boil. Cook ramen noodles in the boiling water, stirring occasionally, until they are cooked through yet still retain some firmness to the bite. Drain the noodles and portion them into individual serving bowls.
4
Add cooked chicken to the pot of broth, then let it simmer for 4 minutes or until heated through. Pour the hot chicken broth over the cooked noodles to serve a delicious and satisfying meal.
