  • 1/4 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 1 1/2 cups chicken broth
  • 2/3 cup white rice
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon hot pepper sauce
  • 1 bay leaf
  • 2 cups cooked, cubed chicken meat

Heat a large skillet over medium-low heat, allowing the butter to melt and become smooth. Introduce the celery, onion, and green bell pepper into the skillet; continue to cook until these vegetables are tender and soft.

Next, incorporate the tomatoes, broth, rice, thyme or basil, garlic salt, ground black pepper, hot pepper sauce, and bay leaf into the skillet. Stir everything together to create a harmonious blend of flavors.

Now, bring the mixture to a rolling boil; then, decrease the heat and cover the skillet with a lid. Allow it to simmer for approximately 20 minutes, or until the rice has become tender and fluffy.

Once the rice is cooked to perfection, add in your cooked chicken and continue to cook until it's heated through. Finally, remove the bay leaf from the skillet and serve the dish hot.
