  • 1 1/2 pounds boneless skinless chicken thighs, cut in half
  • 3 teaspoons ground turmeric
  • 1 teaspoon chili powder
  • 1 1/2 teaspoons salt
  • 1 (14.5 ounce) can peeled and diced tomatoes
  • 2 tablespoons ghee (clarified butter)
  • 3 teaspoons ground cumin
  • 3 teaspoons ground coriander
  • 2 tablespoons grated fresh ginger root
  • 1/2 cup chopped cilantro leaves

Preheat a large, deep skillet over medium-high heat by allowing the oil to warm up. Introduce the onions and garlic into the skillet, cooking them for approximately 2 minutes to soften their texture. Next, add the chicken and sprinkle with turmeric, chili powder, and salt to enhance its flavor. Gently stir the ingredients together, scraping the bottom of the pan periodically and rotating the chicken pieces to ensure even cooking.

Now, pour in the tomatoes along with their juice, covering the skillet and reducing heat to medium. Allow the mixture to simmer for 20 minutes, promoting a rich flavor development.

After 20 minutes of simmering, remove the lid and continue to cook for an additional 10 minutes, allowing excess moisture to evaporate.
