- 2 (14.5 ounce) cans diced tomatoes
- 1 large bay leaf
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 4 skinless, boneless chicken breasts

Preheat your oven to the desired temperature of 350 degrees Fahrenheit (or 175 degrees Celsius).

In a large cooking vessel, warm the oil over an intermediate heat setting. Introduce garlic, onion, celery, and bell pepper into the mixture. Cook, stirring periodically, until these vegetables are softened (approximately 4 minutes). Add tomatoes, a bay leaf, salt, and cayenne pepper to the sauce. Continue cooking the sauce for an additional 3 minutes, stirring frequently.

Position chicken breasts in a rectangular baking container measuring 8x11 inches. Pour the prepared Creole sauce over the chicken breasts.
