  • 1 pound skinless, boneless chicken breasts, cut into 1-inch cubes
  • salt and ground black pepper to taste
  • 2 cups shredded Ivanhoe Old Cheddar, divided
  • 1 cup diced green pepper
  • 2/3 cup Gay Lea Sour Cream
  • 1/2 cup sliced black olives
  • 1/3 cup salsa
  • 1 jalapeno pepper, seeded and minced
  • 2 tablespoons chopped fresh cilantro
  • 4 large flour tortillas

Preheat your oven to the desired temperature of 350 degrees Fahrenheit (or equivalently, 180 degrees Celsius).

In a large skillet, heat butter over an elevated heat setting until it reaches a melted state. Add chicken and cook until the interior is no longer pink, taking approximately 8 minutes to achieve this.

Season the chicken with a pinch of salt and pepper, then transfer it to a spacious container.

Combine 1 cup of shredded cheese, sliced bell pepper, sour cream, pitted olives, salsa, diced jalapeño, and chopped cilantro with the chicken; stir to create a harmonious blend.

Place 1/4 of the chicken mixture onto a tortilla, fold it to enclose the filling completely, and then position it seam-side down in a small baking dish. Repeat this process to fill and roll the remaining tortillas.
