Spicy Caribbean Crab Soufflé

  • 1/2 cup sweetened, flaked coconut
  • 4 tablespoons unsalted butter
  • 1/3 cup celery tops
  • 1 clove garlic, minced
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • ground black pepper to taste
  • 3 tablespoons unbleached all-purpose flour
  • 1 1/4 cups milk
  • 4 egg yolks
  • 1/2 pound crabmeat
  • 6 egg whites, stiffly beaten
  • 1/4 teaspoon fresh lemon juice

Preheat your oven to a high temperature of 400 degrees Fahrenheit (200 degrees Celsius).

Next, take some butter and grease a large, 8-cup capacity soufflé dish.

To enhance the flavor of your dish, toast some coconut in a non-stick skillet over very low heat.

In a medium-sized pan, melt some butter over low heat and add in chopped celery, minced garlic, curry powder, dried thyme, red pepper flakes, salt and pepper. Cook these ingredients for about 3 minutes, stirring occasionally.

Add a spoonful of flour to the pan and stir until it forms a smooth paste, taking around 1 minute.

Pour in some milk and cook over medium heat, stirring constantly, until the mixture comes to a boil and thickens.

Allow this sauce to cool down slightly, then whisk in some egg yolks one at a time until they're fully incorporated.

Mix in the toasted coconut and crab meat into the sauce.

In a separate bowl, beat some egg whites and lemon juice together using an electric mixer until they become stiff but not dry.

Take 1/4 of the egg whites and mix them into the crab mixture, being careful not to overmix.

Gently fold in the remaining egg whites into the mixture, making sure not to deflate its volume.

Transfer this mixture to your prepared soufflé dish and place it on a rack at the bottom of the oven.
