- 4 (10 inch) flour tortillas
- 1 cup shredded Mexican cheese blend

Heat a generous amount of butter in a large skillet over a relatively low heat setting. Add the onion and cook, stirring occasionally, until it becomes tender and develops a light golden color, approximately 10 minutes. Introduce the jalapeño peppers into the skillet and continue to cook, stirring frequently, until the onion reaches a browned state, roughly 10 additional minutes. Transfer the mixture to a serving plate.

Prepare the skillet by adding a small amount of oil, roughly 1 tablespoon. Place one tortilla in the skillet and layer it with a quarter cup of cheese, half of the previously cooked onion mixture, and an additional quarter cup of cheese. Cover with another tortilla and cook the quesadilla until it develops a browned appearance and the cheese is melted, usually taking 1 to 2 minutes on each side. Remove the quesadilla from the skillet and transfer it to a serving plate, replenishing the oil in the skillet as necessary. Repeat the process with the remaining tortilla to create the second quesadilla.
