Spicy Calypso Sauce

  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 tablespoons lime juice
  • 2 tablespoons brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon tequila
  • 2 teaspoons salt
  • 2 teaspoons mustard powder
  • 1 teaspoon ground allspice

Heat a generous amount of olive oil in a skillet over medium heat. Cook and stir the onion and garlic mixture in the hot skillet until the onion becomes translucent, taking around 5 minutes to achieve this.

Mix together the cooked onion mixture, habanero peppers, a squeeze of fresh lime juice, a spoonful of brown sugar, a splash of apple cider vinegar, a dash of tequila, a pinch of salt, some mustard powder, and a sprinkle of allspice in a blender. Blend the ingredients until they form a smooth consistency.
