Spicy Cajun Shrimp Crepes

  • 2/3 cup all-purpose flour

  • 1/2 teaspoon granulated garlic
  • 1 pinch salt
  • 1/4 cup butter
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon Cajun seasoning
  • 1/2 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 1 teaspoon Cajun seasoning
  • 2 tablespoons dry white wine

Combine milk, flour, and eggs in a blender and blend on high speed until the ingredients are thoroughly incorporated. This should take around 1 minute. Allow the mixture to sit for a period of time, approximately 30 minutes, in order to enable the ingredients to meld together.

Preheat a nonstick skillet with a diameter of 8 inches over medium heat. Take the pan off the stove and pour approximately 3 tablespoons of batter into its center; tilt the skillet so that the batter evenly covers the surface. Cook until the top appears dry and slightly firm to the touch, taking around 45 to 60 seconds. Flip the crepe over and cook for an additional 15 to 20 seconds, or until it reaches your desired level of doneness. Remove the crepe from the skillet and place it on a plate, where you can stack it with other crepes. Repeat this process using the remaining batter, resulting in leftover crepes that can be used at a later time.

Melt 2 tablespoons of butter in a skillet over medium heat, which is suitable for cooking the filling. Add sliced bell peppers and onions to the skillet and stir-fry until they are tender, approximately 5 minutes. Stir in minced garlic to add flavor and cook for a short period of time, until fragrant. Add the remaining 2 tablespoons of butter to the skillet and stir in shrimp and Cajun seasoning.

Combine cream, flour, and Cajun seasoning together in a bowl. Slowly pour the mixture into the shrimp mixture, stirring constantly to prevent lumps from forming. Cook and stir until the mixture thickens slightly, approximately 2 minutes. Pour in white wine and cook for a longer period of time, until the mixture has heated through and reached your desired consistency, taking around 2 to 5 minutes.

Spoon some of the shrimp filling into the center of each crepe and roll it around the filling, or fold in half to create a triangle shape.
