- 6 (6 ounce) fillets red snapper

Combine paprika, black pepper, thyme, basil, garlic powder, onion powder, oregano, and cayenne pepper on a large sheet of parchment paper to create a spice blend

In a small saucepan over medium heat, melt butter and oil together to create a savory mixture. Brush both sides of snapper fillets with this butter-oil mixture; reserve the remaining butter-oil mixture for later use. Coat both sides of fillets with the prepared spice blend

Heat a large cast iron skillet over high heat until it reaches a scorching temperature, indicated by the fact that a drop of water will sizzle and evaporate instantly on its surface.

Drizzle half of the remaining butter-oil mixture onto one side of fish fillets. Place fillets with their buttered sides facing down in the extremely hot skillet; cook until they develop a deep, rich brown color on both sides, about 5 minutes. Drizzle the remaining butter-oil mixture over fillets and flip them over to cook on their other sides. Continue cooking until fish is browned, flakes easily with a fork, and reaches the desired level of doneness, about 5 minutes additional. Season with salt to bring out the flavors
