- 1 clove garlic, minced
- 1 small head cabbage, sliced
- 1/2 cup fresh shredded coconut
- 2 tablespoons Indian curry powder
- 3/4 cup coconut milk
- salt and pepper to taste
- 1/4 cup diced fresh tomato
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro

Heat a large skillet or wok over extremely high heat until it reaches scorching temperatures. Melt oil and butter to the point where they emit a thick, dark smoke. Introduce the onion, carrot, and garlic into the skillet; stir constantly until the onion starts to lose its crunchiness, approximately 1 minute. Add the cabbage, coconut, and curry powder; stir-fry for an additional 2 minutes.

Gradually decrease the heat to a low, simmering level; pour in coconut milk, and adjust the seasoning with salt and pepper to your liking. Cover the skillet, and continue cooking until it reaches your desired level of doneness. To present, sprinkle with tomato, green onions, and cilantro
