Spicy Brazilian Collard Greens
Ingredients
  • 1/2 pound peppered bacon, diced
  • 1 onion, chopped
  • 2 pounds collard greens - rinsed, stemmed and torn into 3x6 inch pieces
  • 1 cup chicken stock
  • 1 teaspoon cayenne pepper
  • 2 tablespoons red wine vinegar

Begin by placing the bacon in a substantial, thick-walled cooking vessel over high heat. Allow it to cook until it reaches a rich brown color and most of the fat has been extracted, stirring occasionally.

Next, add the onion to the pot and continue cooking until it becomes soft and shiny, approximately 4 minutes.

Subsequently, introduce the collards into the pot and mix them with the remaining bacon fat. Then, pour in the chicken stock to cover the ingredients. Add a pinch of cayenne pepper for flavor.

Reduce the heat to a low simmer and cook the mixture for 1 hour and 15 minutes, allowing the flavors to meld together.

After this period of cooking, stir in some red wine vinegar into the pot. Continue to cook for an additional 15 minutes, until roughly half of the liquid has evaporated.
