Ingredients
- 1 tablespoon butter, or as needed
- 2 tablespoons vegetable oil
- 1 medium red onion, diced
- 2 cloves garlic, minced, or more to taste
- 1 pound bacon, diced
- 1 medium red bell pepper, diced
- 3 medium jalapeno peppers, minced, or to taste
- 1 cup beer, or more to taste
- 1 cup barbecue sauce
- 1 cup brown sugar
- 1/4 cup molasses
- 6 cups cooked pinto beans
- 1 pinch garlic salt, or to taste
- cracked black pepper to taste
Instructions
1
Preheat your oven to the desired temperature of 375 degrees Fahrenheit or 190 degrees Celsius.
2
Next, take a small amount of butter and rub it onto the interior surface of a 9x13-inch baking dish to prevent food from sticking.
3
In a large skillet, heat some oil over medium-high heat and sauté sliced onions and minced garlic until they start to become translucent, taking anywhere from 5 to 7 minutes.
4
Add diced bacon, sliced bell peppers, and chopped jalapeños to the skillet; stir constantly until the bacon turns golden brown, which should take around 7 to 10 minutes.
5
Meanwhile, combine beer, barbecue sauce, brown sugar, and molasses in a large bowl.
6
Mix the pinto beans with the bacon-onion mixture, adding garlic salt and pepper to taste.
7
Pour the bean mixture into the prepared baking dish.
8
Bake the dish in your preheated oven until it's bubbly and golden brown, which should take approximately 45 minutes.
