Ingredients
- 3 tablespoons olive oil
- 1 onion, chopped
- 6 cloves garlic, minced
- 5 green chile peppers, finely sliced
- 1 teaspoon ginger paste
- 3 whole cardamom seeds
- 2 whole cloves
- 1 1/2 (2 inch) cinnamon sticks
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon garlic powder
- 1 teaspoon cayenne pepper
- 1 cup water
- 2 pounds boneless beef chuck, cut into 1-1/2-inch pieces

Preheat a skillet over medium heat and pour in olive oil. Introduce the onion into the skillet, stirring constantly until it becomes soft and loses its vibrant color, approximately 5 minutes. Gradually decrease the heat to medium-low and continue cooking and stirring until the onion reaches a deep, rich brown hue, taking around 20 minutes more.

Add the garlic, green chiles, ginger paste, cardamom seeds, cloves, and cinnamon sticks to the skillet. Stir constantly until the garlic starts to develop a nutty aroma, roughly 3-5 minutes more.

Combine cumin, coriander, turmeric, garlic powder, cayenne pepper, and water in the onion mixture. Allow it to simmer until most of the liquid has evaporated, leaving a thickened paste.

Introduce beef chuck pieces to the onion mixture and stir until they are evenly coated with the spice blend. Simmer over medium-low heat, stirring occasionally, until the beef is fully cooked and tender, approximately 1-1.5 hours.
