Ingredients
- 1/2 cup soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons brown sugar
- 3 cloves garlic, crushed
- 1 large red onion, chopped
- ground black pepper to taste
- 1 teaspoon red pepper flakes
- 2 tablespoons sesame seeds
- 2 leeks, chopped
- 1 small carrot, chopped
- 1 pound beef round steak, sliced paper thin

Combine all the ingredients - soy sauce, sesame oil, brown sugar, garlic, and red onion - in a large bowl. Thoroughly blend them together using a spoon or whisk until well combined. Add the black pepper, red pepper flakes, sesame seeds, leeks, and carrot to the mixture. Using your hands, gently fold in the meat until it is evenly coated with the marinade. Cover the bowl and let it sit for at least 2 hours or overnight to allow the flavors to meld.

Preheat a wok over medium-high heat and brush its bottom with cooking oil. Once hot, add the meat and marinade to the wok in one go. Stir constantly as it cooks quickly, usually within a few minutes. Remove the wok from heat and serve with rice or noodles. For an authentic Korean-style fire meat, shape the cooked mixture into a roll using a leaf of red lettuce.
