Ingredients
- 1 teaspoon vegetable oil
- 1 Anaheim chile pepper, chopped
- 1 leek, chopped
- 2 cloves garlic, crushed
- salt and pepper to taste
- 1 cup chicken broth
- 2 large tomatoes, diced
- 1/2 teaspoon ground cumin
- 1 1/2 pounds halibut fillets
- 1 lime
- 12 corn tortillas
Instructions
1
Preheat the cooking vessel by heating the oil over a moderate temperature, then sauté the chile, leek, and garlic until they become soft and lightly caramelized. Add a pinch of salt to enhance the flavors.
2
Combine the chicken broth and tomatoes in the skillet, then sprinkle a pinch of cumin to add depth. Bring the mixture to a rolling boil before reducing the heat to a low simmer. Introduce the halibut into the mixture, followed by a squeeze of lime juice to add a burst of citrus flavor. Allow it to cook for 15 to 20 minutes, or until the halibut is easily broken apart with a fork. Wrap it in warm corn tortillas to serve.
