- 1/2 cup water
- 2 bay leaves
- 1 teaspoon whole or cracked black peppercorns
- 1 medium onion, chopped
- 2 jalapeno peppers
- 1/2 cup soy sauce, or to taste
- 1 whole head garlic, minced

Begin by filling a large container with water and placing it on the stovetop. Turn the heat to high and wait for the water to reach its boiling point. Next, carefully add chicken wings to the pot and cook for 5-8 minutes or until they are cooked through. Remove the wings from the pot using a colander and gently rinse them under warm running water before returning them to the empty pot.

Now, add a splash of vinegar, followed by water, bay leaves, peppercorns, sliced onion, and diced jalapeños to the pot. Stir gently and bring the mixture to a gentle simmer over low heat. Allow it to cook for 20 minutes, stirring occasionally.

After the initial cooking time has passed, stir in a small amount of soy sauce and continue to simmer the mixture over low heat for an additional 10-15 minutes, or until the sauce has thickened and reduced by half. Transfer the cooked chicken wings to a colander and set them aside.

Next, add whole garlic cloves to the remaining sauce in the pot. Continue to simmer the mixture until it reaches a syrupy consistency and the jalapeños have burst open, releasing their seeds into the sauce.

Meanwhile, heat a large non-stick skillet over medium heat. Add the cooked chicken wings and minced garlic to the skillet, stirring constantly until the garlic is tender and the wings have browned. Return the cooked chicken wings to the sauce and coat them evenly before serving.
