Ingredients
- 3 large sweet potatoes
- 3 (14 ounce) cans low-sodium chicken broth
- 1/4 cup brown sugar, or more to taste
- 1/2 teaspoon salt (to taste)
- 1/4 teaspoon ground nutmeg
- Black pepper to taste
- Cayenne pepper to taste
- 1/3 cup heavy cream
Instructions
1
Preheat your oven to a high temperature of 350 degrees Fahrenheit (175 degrees Celsius). Move the rack inside the oven to its central position.
2
Place the sweet potatoes on the preheated rack in the oven and bake until they are tender, approximately 1 hour and 30 minutes. Take them out of the oven and let them sit for a short while.
3
Carefully peel the sweet potatoes and extract their soft flesh. Use a blender to puree them in small batches, adding enough chicken broth to achieve the desired consistency. Transfer the blended mixture to a large saucepan.
4
Heat the mixture over high heat until it starts to simmer, then gradually decrease the heat to a lower level. Stir in brown sugar, salt, nutmeg, black pepper, and cayenne pepper; cover the saucepan and let it simmer for 10 minutes. Remove from heat and add a splash of cream to the mixture.
