Ingredients
- 2 tablespoons olive oil, or as needed
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup quinoa
- 2 cups chicken broth
- 1 tablespoon curry powder, or to taste
- 1 tablespoon ancho chile powder
- salt and pepper to taste

Preheat the skillet over medium heat by heating oil in a large pan. Introduce the onion and garlic into the pan, stirring constantly until they become soft and fragrant, approximately 2 minutes. Next, add the quinoa to the pan and stir until it is lightly toasted, around 5 minutes.

Now, introduce the broth to the pan and bring it to a rolling boil. Lower the heat level and add the curry and chile powder to the mixture. Cover the pan and let it simmer until the broth has evaporated and the quinoa is tender, taking around 25 minutes.

Finally, season your dish to taste by adding salt and pepper as desired.
