- 1 teaspoon ground allspice
- 1 teaspoon salt
- 2/3 cup vegetable oil
- 3 eggs

Preheat your oven to the desired temperature of 350 degrees Fahrenheit (175 degrees Celsius).

To prepare the baking dish, spray it with non-stick cooking spray or place a layer of paper muffin liners inside the 12 available spaces.

Next, take your pumpkin and cut it in half lengthwise. Remove any seeds or stringy pulp from the halves, then place them cut-side down on a baking sheet. Cover the pumpkin with aluminum foil and bake in your preheated oven until it's tender, taking around 90 minutes to achieve this.

Once the pumpkin is cooked, carefully scoop out the pulp and blend it into a smooth puree. Measure out 2 cups of this pumpkin puree and set it aside for later use.

In a large mixing bowl, combine the dry ingredients of flour, sugar, baking soda, baking powder, ground cloves, cinnamon, nutmeg, and allspice. Mix these dry ingredients together until they're well combined.

In a separate bowl, whisk together 2 cups of pumpkin puree, vegetable oil, and eggs until they form a smooth mixture.

Slowly pour the pumpkin mixture into the dry ingredients, stirring constantly until you achieve a smooth batter.

Scoop this batter evenly into each of the 12 prepared muffin cups, filling them about three-quarters full.
