Next, take a moment to prepare your baking surface by lightly coating it with oil or cooking spray. A 10x15-inch jelly roll pan is ideal for this recipe.

Meanwhile, combine sugar, pumpkin puree, eggs, and a pinch of warm spice - cinnamon - in a large mixing bowl.
