- 4 cups chicken broth
- 3 cups water
- 1 cup chopped canned tomatoes with juice
- 2 teaspoons garlic and herb seasoning (such as SpikeĀ®)
- 1 (10 ounce) package chopped frozen spinach

Preheat the cooking vessel by warming olive oil over a moderate flame.

Then, introduce an aromatic element - the onion - into the pot along with a bay leaf. Continue to stir and cook until the onion becomes transparent, taking approximately 5 minutes.

Next, incorporate a blend of spices - cumin, curry powder, turmeric, and coriander - into the mixture. Stir constantly to allow these flavors to meld together, and let them cook for 1 to 2 minutes.

At this stage, combine the potatoes, chicken broth, water, canned tomatoes, and a pinch of seasoning in the pot. Stir well to combine all the ingredients, then bring the mixture to a rolling boil.
