- 1 baking potato, peeled and cut into 1/4-inch cubes
- 1 1/2 teaspoons salt
- 1/8 teaspoon ground turmeric
- 1 1/2 teaspoons white sugar
- 1/8 teaspoon cayenne pepper

Heat a generous amount of oil in a substantial, deep frying pan over a moderately high heat setting. Sear mustard seeds in the hot oil until they start to burst and turn golden brown, taking around 10-15 seconds.

Combine the cauliflower, potato, a pinch of salt, and turmeric powder in the oil, stirring until everything is evenly coated; place a lid on top of the pan to trap the heat, lower the heat to a medium level, and cook, stirring occasionally, until both the cauliflower and potato are tender and soft, taking around 15-20 minutes.

Add a sweetener of your choice to the mixture and stir in some heat with cayenne pepper, then continue cooking until all the flavors have melded together and developed a rich taste, approximately 2 minutes more.
