  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground nutmeg
  • 7 1/2 cups white sugar
  • 1 teaspoon butter
  • 8 half-pint canning jars with lids and rings, or as needed

Combine pears, lemon juice, fruit pectin, cinnamon, cloves, allspice, and nutmeg in a large heavy saucepan; heat to a boil, stirring continuously.

Add sugar immediately and stir thoroughly, then return the mixture to a full rolling boil. Boil for 1 minute.

Combine butter with the boiling jam mixture, allowing it to settle and eliminate foam.

Sterilize the jars and lids in a pot of boiling water for at least 5 minutes to ensure they are properly sanitized.

Fill the hot, sterilized jars with the pear jam, leaving a small gap of 1/4 inch between the top of the jar and the lid. Use a knife or thin spatula to remove any air bubbles that may have formed during filling.

Wipe the rims of the jars with a damp cloth to remove any food residue, ensuring they are clean and free of debris. Secure the lids onto the jars, then screw on the rings.

Position a rack at the bottom of a large stockpot and fill it halfway with water. Bring to a boil, then carefully lower the jars into the boiling water using a jar lifter or holder. Leave a 2-inch gap between each jar to allow for expansion during cooling.

If necessary, add more boiling water to bring the water level up to at least 1 inch above the tops of the jars. Bring the water back to a rolling boil, cover the pot, and process for 10 minutes.

Once removed from the stockpot, place the jars on a cloth-covered or wooden surface, several inches apart, allowing them to cool completely. As they cool, press the top of each lid with your finger, verifying that the seal is tight and secure (the lid should not move up or down at all). Store the sealed jars in a cool, dark area.
