Combine tea and cornstarch in a small bowl, then pour the mixture into a saucepan. Add sliced peaches and cook over medium heat, stirring continuously until the mixture reaches its boiling point, approximately 2 to 3 minutes.

Next, add granulated white sugar, brown sugar, and a pinch of nutmeg to the saucepan. Continue cooking over medium-low heat until the sauce reaches its desired consistency, roughly 10 minutes.

Once the sauce has thickened, remove it from the heat source and stir in a few drops of vanilla extract. Allow the sauce to cool slightly before letting it sit for 5 to 10 minutes, during which time it will continue to thicken.
