Spiced Moroccan Chicken

  • 1 pound skinless, boneless chicken breast meat - cubed
  • 2 teaspoons salt
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 2 cloves garlic, chopped
  • 1 tablespoon minced fresh ginger root
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground cayenne pepper
  • 1/4 teaspoon ground turmeric
  • 1 1/2 cups chicken broth
  • 1 cup crushed tomatoes
  • 1 cup canned chickpeas, drained
  • 1 zucchini, sliced
  • 1 tablespoon lemon juice

Heat a generous amount of oil in a substantial saucepan over an intermediate heat setting. Introduce the chicken and sprinkle with salt to enhance flavor; cook, stirring periodically, until the chicken is partially cooked, taking around 3 to 4 minutes. Transfer the chicken to a serving plate.

Add the onion, carrots, celery, and garlic to the saucepan; cook until they are tender and easily pierced with a fork, approximately 4 to 5 minutes. Add the ginger, cumin, paprika, oregano, cayenne pepper, and turmeric to the saucepan; cook until these ingredients emit a pleasant aroma, roughly 1 minute. Introduce the broth and tomatoes into the saucepan; then return the chicken to its original position.

Decrease the heat to a low setting and let the mixture simmer for 10 minutes, allowing all flavors to meld together.

Introduce the chickpeas and zucchini into the saucepan; return it to a gentle simmer. Cover the pan with a lid and cook until the zucchini is tender, taking around 15 minutes.
