  • 1 teaspoon kosher salt
  • 2 large onions, chopped
  • 1 cup golden raisins
  • 1 cup raisins
  • 1/2 cup fresh ginger root, chopped
  • 3 cloves garlic, chopped
  • 16 cups sliced, semi-ripe mangos
  • 1/2 cup sliced almonds

Acquire the necessary ingredients for this recipe. Combine granulated sugar, brown sugar, apple cider vinegar, diced chile peppers, ground allspice, ground ginger, ground nutmeg, cinnamon sticks, whole cloves, and salt in a large saucepan. Heat the mixture over high heat until it reaches a rolling boil; maintain the boil for 30 minutes.

Add sliced onions, golden raisins, regular raisins, fresh ginger, and minced garlic to the saucepan. Continue to heat the mixture over high heat until it reaches a boil again; maintain the boil for another 30 minutes.

Introduce diced mangos and almonds (if using) to the saucepan. Decrease the heat to a low simmer and allow the mixture to cook for 30 minutes.

Fill hot, sterilized jars with the chutney mixture, leaving about 1/4 inch of space at the top. Remove any air bubbles from the jars by running a blunt knife or thin spatula around the edges. Use a moist paper towel to wipe away any residue from the rims of the jars. Finally, secure the lids and screw rings tightly onto the jars.
