Spiced Indonesian Rice

  • 1 large onion, chopped
  • 2 jalapeno peppers, seeded and minced
  • 2 cloves garlic, crushed
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 2 cups uncooked long-grain white rice
  • 2 (14.5 ounce) cans chicken broth
  • 1 cup water
  • 1 bay leaf
  • 2 green onions, chopped

Preheat the pan over medium heat, using a generous amount of oil to coat the bottom. Introduce the onion, jalapeños, and garlic into the pan, stirring to combine them evenly. Allow these ingredients to soften and become transparent; this process should take around 6 to 8 minutes.

Next, add the turmeric and cinnamon to the pan, stirring until they are well incorporated. Then, introduce the rice into the mixture and cook for 2 minutes, stirring constantly to prevent burning.

After that, combine the chicken broth, water, and bay leaf in the pan. Stir until these ingredients come to a rolling boil. Once boiling, decrease the heat to its lowest setting and cover the pan with a lid. Allow it to simmer for 20 minutes, allowing all the flavors to meld together.

Once the cooking time has elapsed, turn off the heat source and let the mixture rest for 5 minutes. Finally, garnish the dish with a sprinkle of chopped green onion on top.
