  • 1 teaspoon mustard seed
  • 1 tablespoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon red chile powder
  • 1/2 head cabbage, sliced
  • 2 potatoes, chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon salt
  • 1/2 cup water, or as needed
  • 1/4 cup chopped fresh cilantro, or to taste

Heat canola oil in a wok over medium heat, allowing it to reach its optimal temperature. Sauté the cumin and mustard seeds in the hot oil, stirring constantly until they start to sizzle and release their fragrance, approximately 1-2 minutes. Add the coriander, turmeric, and cayenne pepper to the wok; cook for another minute, stirring frequently.

Combine the cabbage, potatoes, ginger-garlic paste, and salt in a bowl. Add this mixture to the wok with the spice blend; stir until everything is well coated. Pour in enough water to create a steaming environment, cover the wok, and cook, stirring occasionally and adding more water as necessary, until the potatoes and cabbage are extremely tender, around 45 minutes.

Remove the wok from the heat source; sprinkle the cooked vegetables with fresh cilantro.
