Ingredients
- 4 cups whole wheat flour
- 4 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground allspice
- 1/2 teaspoon ground cloves
- 1/4 teaspoon ground black pepper
- 1 cup butter
- 1 cup white sugar
- 1/2 cup brown sugar
- 1/4 cup molasses
- 1 teaspoon grated orange zest
- 6 medium eggs
Instructions
1
Heat the pizzelle baker to its recommended temperature, following the manufacturer's guidelines for preheating.
2
Mix together 1 cup of whole wheat flour, 2 teaspoons of baking powder, 1/2 teaspoon of ground cinnamon, 1/4 teaspoon of ground ginger, 1/4 teaspoon of ground allspice, 1/8 teaspoon of ground cloves, and a pinch of black pepper in a large bowl.
3
In a medium-sized saucepan, melt 2 tablespoons of butter over medium heat. Once melted, remove the saucepan from the heat source and stir in 1/2 cup of white sugar, 1/4 cup of brown sugar, 2 tablespoons of molasses, and the grated zest of 1 orange until well combined. Add half of the flour mixture to the saucepan and stir until a smooth consistency is achieved. Crack in 2 eggs and mix until the batter is free of lumps. Gradually add the remaining flour mixture, stirring until the batter is smooth and even.
4
Spoon small amounts of the batter onto the preheated pizzelle baker, leaving space between each cookie. Bake until golden brown, taking approximately 1 minute and 30 seconds to achieve the desired result.
