Begin by heating the molasses, honey, and sugar in a large saucepan over medium heat until they reach a gentle boil. Next, take the saucepan off the heat and let it sit for 30 minutes to allow the mixture to cool down slightly.

While waiting, preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) - this will ensure the perfect temperature for baking.

In a separate bowl, mix together softened butter, lemon zest, anise, ginger, nutmeg, cloves, cinnamon, and cardamom until well combined. Then, dissolve baking soda in water before adding it to the molasses mixture.
