Ingredients
- 1 pound dried figs
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/2 cup buttermilk
- 1 cup white sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup chopped walnuts
Instructions
1
Firstly, set the oven to 350 degrees F (175 degrees C) before commencing with the recipe. Next, lightly grease and dust a 10-inch tube pan to prevent sticking during baking.
2
In a saucepan, combine dried figs and water. Heat over low heat until the figs become tender, approximately 5 minutes. Remove from heat and set aside.
3
Then, in a separate bowl, whisk together flour, baking powder, salt, baking soda, cinnamon, and cloves to create a dry mixture.
4
Cut the cooked figs into small cubes. In another bowl, mix buttermilk with the reserved cooking liquid from the figs.
5
Using an electric mixer in a large bowl, cream together sugar and butter until light and airy. Add eggs one at a time, beating well after each addition.
6
Next, stir in vanilla extract. Gradually add the dry mixture to the sugar and butter mixture, alternating with the buttermilk mixture.
7
Continue by stirring in the fig cubes and walnuts. Pour the batter into the prepared tube pan.
8
Turn the cake out onto a wire rack and bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
9
Finally, let the cake cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.
