Ingredients
- 1 (16 ounce) package cottage cheese
- 1 clove garlic, minced
- 1/2 teaspoon ground cardamom
- 1/8 teaspoon ground cloves
- 2 tablespoons butter
- 1/4 cup finely chopped onion
- 1 tablespoon minced fresh ginger root
- 1 green chile pepper, chopped
- 2 cloves garlic, minced
- 2 pounds spinach leaves, cut into 2-inch pieces

Combine cottage cheese, minced garlic, ground cardamom, and whole cloves in a bowl. Seal the container and chill until you're ready to serve.

Melt butter in a frying pan over a moderate heat. Introduce the onion, ginger, green chile pepper, and minced garlic into the pan; cook and stir until the onion has softened and turned pale, approximately 5 minutes. Introduce the spinach into the pan and cook until it has just lost its firmness. Discard any leftover liquid, and serve the spinach mixture over the seasoned cottage cheese.
