Ingredients
- 1 cup basmati rice
- 2 cups water
- 1/4 cup roasted peanuts
- 1 tablespoon margarine
- 1 onion, sliced
- 1 teaspoon minced fresh ginger root
- 3/4 cup grated carrots
- salt to taste
- cayenne pepper to taste
- chopped fresh cilantro

Combine uncooked rice and water in a medium-sized cooking vessel. Place the saucepan over extremely high heat to initiate boiling, then gradually decrease the intensity of the heat to a low setting. Cover the saucepan with a lid and allow it to simmer gently until the rice is tender, approximately 20 minutes.

During this time, process peanuts in a food processor until they reach the desired consistency and set them aside for later use. Melt margarine in a skillet over medium heat, then add the onion and stir until it becomes soft and golden brown. Allow this mixture to cook for about 10 minutes, stirring occasionally.

Next, add the ginger, carrots, and salt to taste to the skillet. Reduce the heat once more to a low setting and cover the skillet with a lid, allowing it to steam for 5 minutes. Stir in cayenne pepper and peanuts into the mixture.

Once the rice is cooked, carefully combine it with the other ingredients in the skillet. Stir gently to avoid overmixing and allow the flavors to meld together. Finally, garnish with chopped cilantro for a visually appealing finish
