Ingredients
- 2 tablespoons butter
- 1 cup finely chopped onion
- 4 cloves garlic, minced
- 4 cups chicken broth
- 2 pounds cubed butternut squash
- 2 teaspoons curry powder
- 1 teaspoon salt
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 1/2 cup half-and-half
- 2 tablespoons honey
- 1/4 cup sour cream, or to taste
Instructions
1
Heat the butter in a large cooking vessel over a moderate temperature until it starts to melt. Add the onion and garlic, then continue to cook and stir them until they become soft and have a rich brown color, approximately 10-15 minutes.
2
Next, combine the broth, butternut squash, curry powder, salt, cumin, and a pinch of heat with the ingredients in the pot. Bring the mixture to a rolling boil before lowering the heat to a low setting and allowing it to simmer until the squash is tender, roughly 15 minutes.
3
Once cooked, remove the soup from the heat source.
4
Now, add half-and-half and honey to the pot, stirring until well combined. Use an immersion blender to puree the soup into a smooth consistency.
5
Finally, transfer the soup to individual serving containers and top each bowl with a dollop of sour cream.
