Ingredients
- 2 2/3 cups white sugar
- 2/3 cup shortening
- 2 cups pureed cooked butternut squash
- 4 eggs
- 2/3 cup water
- 3 1/3 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1 1/2 teaspoons salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- 2/3 cup chopped walnuts
- 2/3 cup raisins
Instructions
1
Preheat your oven to the desired temperature of 350 degrees Fahrenheit (175 degrees Celsius).
2
Next, take two 9x5-inch loaf pans and apply a thin layer of grease to them in order to prevent the bread from sticking.
3
In a large mixing bowl, combine sugar and butter and mix them together until they form a smooth and airy consistency.
4
Add butternut squash, eggs, and water to the bowl with sugar mixture and blend them together until well combined.
5
In a separate bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and ground cloves until they are evenly mixed.
6
Gradually add the dry ingredients to the sugar mixture, stirring constantly until just combined.
7
Mix in walnuts and raisins at this stage to give the bread a delightful texture.
8
Pour the batter into the prepared loaf pans and place them in the preheated oven to bake.
9
Bake for approximately 1 hour, or until a toothpick inserted into the center of the bread comes out clean.
10
Once done, remove the loaves from the oven and let them cool for a short while in their pans before transferring them to a wire rack to cool completely.
