- 4 cloves garlic, minced
- 2 tablespoons grated fresh ginger root
- 1 serrano chile pepper, finely chopped
- 2 teaspoons chopped fresh cilantro
- 1 tablespoon ground coriander
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons ground cumin
- 1 teaspoon ground cayenne pepper
- 1 teaspoon ground turmeric
- 3 potatoes, peeled and diced
- 1 (28 ounce) can diced tomatoes
- 1 cup frozen green peas
- 1 teaspoon garam masala

Heat olive oil in a substantial cooking vessel over medium-high heat. Introduce the onion; cook and stir until it becomes tender and starts to develop a rich brown color, approximately 12 minutes. If the onion has formed stubborn browned bits at the bottom of the pan, add water and stir to release them.

Combine ground beef, garlic, ginger, serrano chile, and cilantro in the pan; cook and stir until the beef is nicely browned and crumbly, 10 to 15 minutes. Decrease heat to medium-low.

Blend coriander, salt, cumin, cayenne pepper, and turmeric into the mixture; cook and stir until the flavors harmonize, roughly 5 minutes.

Introduce potatoes and tomatoes into the pan; cover and simmer until the potatoes are tender, around 15 minutes.

Add green peas to the mixture; cook until the sauce has thickened slightly and the flavors have melded together, 10 to 15 minutes.
