Combine the sliced apples, plump raisins, finely chopped onion, grated ginger, water, white granulated sugar, brown sugar, ground cinnamon, ground cardamom, black pepper, and ground nutmeg in a large saucepan; heat it over medium-high heat, stirring constantly to prevent burning.

Gradually decrease the heat to a lower setting, cover the saucepan with a lid, and let it simmer gently, stirring occasionally to prevent scorching, until the apples become tender and easily pierced with a fork, approximately 30 minutes.

Stir the mixture occasionally to ensure even cooking and continue simmering uncovered until it reaches a slightly thicker consistency, roughly 15 minutes longer.

Immediately remove the saucepan from heat; carefully discard the chopped onion and ginger to achieve a smoother texture. Introduce white wine vinegar into the mixture, stirring well to combine.
