Spiced Apple Chutney
Ingredients
  • 15 tart apples - peeled, cored, and finely chopped
  • 1/2 cup golden raisins
  • 1 yellow onion, quartered
  • 3 (1 inch) pieces fresh ginger root, peeled
  • 1/2 cup water
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon white pepper
  • 1/4 teaspoon ground nutmeg
  • 1 cup white wine vinegar
Instructions
1
Collect and prepare all necessary ingredients by gathering them in one place.
2
Combine the sliced apples, plump raisins, finely chopped onion, grated ginger, water, white granulated sugar, brown sugar, ground cinnamon, ground cardamom, black pepper, and ground nutmeg in a large saucepan; heat it over medium-high heat, stirring constantly to prevent burning.
3
Gradually decrease the heat to a lower setting, cover the saucepan with a lid, and let it simmer gently, stirring occasionally to prevent scorching, until the apples become tender and easily pierced with a fork, approximately 30 minutes.
4
Stir the mixture occasionally to ensure even cooking and continue simmering uncovered until it reaches a slightly thicker consistency, roughly 15 minutes longer.
5
Immediately remove the saucepan from heat; carefully discard the chopped onion and ginger to achieve a smoother texture. Introduce white wine vinegar into the mixture, stirring well to combine.
6
Allow the chutney to cool and settle at room temperature for at least 2 hours before transferring it into a sterilized jar or container. Seal the jar using the canning method in boiling water, and store it in the refrigerator for up to 2 weeks before serving.
