Spiced Apple Cake

  • 1 1/2 cups white sugar
  • 1/2 cup shortening
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 3 cups apples - peeled, cored and chopped
  • 1/2 cup chopped walnuts
  • 3 tablespoons milk
  • 2 tablespoons margarine
  • 1 1/2 cups brown sugar, packed

Preheat your oven to 325 degrees Fahrenheit, or 165 degrees Celsius.

To prepare the baking dish, lightly coat an 8x8-inch square pan with a thin layer of oil or cooking spray.

In a large mixing bowl, combine the sugar and shortening using an electric mixer. Gradually add in the eggs one at a time, beating well after each addition. Add the vanilla extract and mix until combined.

In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt until well combined.

Gradually add the dry ingredients to the egg mixture, stirring until a smooth batter forms. Gently fold in the chopped apples and walnuts to distribute them evenly.

Spoon the cake batter into the prepared baking dish, smoothing out the top.

Bake the cake in a preheated oven for 40 minutes, or until it is golden brown and a toothpick inserted into the center comes out clean.

To make the sweet topping, combine the milk, margarine, and brown sugar in a small saucepan over medium-low heat. Stir constantly until the brown sugar dissolves and the margarine melts.

Remove the cake from the oven and place it on a baking sheet lined with parchment paper to prevent spills. Pour the warm topping over the cake, making sure it's evenly coated.
