  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pound beef stew meat
  • 1 tablespoon butter
  • 2 cups water
  • 2 tablespoons red wine vinegar
  • 1/4 cup chopped pimento-stuffed green Manzanilla olives

Preheat your cooking vessel by heating 1 tablespoon of oil in a Dutch oven over medium heat. Introduce sliced bell pepper, chopped onion, and minced garlic into the pot, stirring occasionally until the onions become tender and start to develop a rich brown color along their edges, approximately 5 minutes have passed. Next, add diced tomatoes to the pot.

In a separate container, combine flour, smoked paprika, sweet paprika, dried oregano, ground cumin, salt, and pepper in a resealable plastic bag. Add the beef stew meat to the bag and mix until it is evenly coated with the spice blend.

In a separate pan, heat the remaining oil and butter over medium-high heat. Brown the coated beef on all sides, taking about 3 to 5 minutes per side.

Transfer the browned stew meat to the Dutch oven. Add water and vinegar; stir to combine. Allow the mixture to simmer over low heat for 1 1/2 hours.
