- 2 cloves garlic, minced
- 2 cups chopped red potatoes
- 1 (14.5 ounce) can diced tomatoes
- 1 (12 ounce) jar sofrito
- 1/2 cup pitted and halved green olives

Preheat a large skillet over medium heat and bring it to the desired temperature. Add beef and cook until it reaches a deep, rich brown color on all sides, approximately 5 minutes. Add a pinch of salt and a few grinds of black pepper to enhance the flavor, then transfer the beef to a slow cooker, leaving some of the savory juices behind in the skillet.

Next, heat those remaining juices in the skillet over medium heat and bring them to a simmer. Add sliced onions and minced garlic to the skillet and sauté until they are softened and fragrant, about 5 minutes. Then, add the mixture to the slow cooker.

Combine diced potatoes, canned tomatoes, sofrito, and pitted olives with the beef mixture in the slow cooker. Finally, cook on Low for 4 to 5 hours or until the beef and potatoes are tender enough to fork, at which point you can serve.
