Spam Musubi Bowl
Ingredients
  • 1/2 cup white sugar
  • 1/4 cup lite soy sauce
  • 1/4 cup oyster sauce
  • 2 (12 ounce) cans low-sodium canned luncheon meat (such as SPAMĀ®), cut into 1/2-inch cubes
  • 2 1/2 cups water
  • 2 cups medium-grain white rice (such as Calrose)
  • 6 tablespoons rice vinegar
  • 1 (1.2 ounce) package roasted and seasoned seaweed, torn into 1 1/2-inch pieces

Combine granulated sugar, soy sauce, and oyster sauce in a large, zip-top container. Add diced Spam and mix until it's evenly coated with the sauce. Seal the container, then massage the contents gently to distribute the marinade. Allow the mixture to sit for at least 1 hour.

In a separate pot, bring water to a rolling boil. Add uncooked white rice and return the pot to a boil. Once boiling, reduce the heat to a low simmer and cook until the liquid has been absorbed and the rice is tender, approximately 15 minutes. Stir in a tablespoon of vinegar to combine with the cooked rice.

As the rice nears completion, heat a skillet over medium-high heat. Add diced Spam and its marinade to the skillet. Cook, stirring constantly, until the Spam is nicely browned and the sauce has been absorbed, around 5 minutes.

In a separate bowl, combine cooked rice, wakame seaweed, and diced luncheon meat. Mix everything together until well combined.
