Ingredients
- 1 spaghetti squash, halved and seeded
- 1 pound lean ground beef
- 1/2 cup finely chopped onion
- 1/2 cup minced bell pepper
- 1 clove garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 (14.5 ounce) can diced tomatoes, drained
- 1/3 cup shredded Cheddar cheese
Instructions
1
Firstly, set your oven to a temperature of 375 degrees Fahrenheit (or 190 degrees Celsius).
2
Next, position the squash in a baking dish with its flesh side facing downwards; fill it with enough boiling water that the water level rises 1/2 inch above the rim of the dish.
3
Then, place the squash in the preheated oven and bake until it becomes tender, which should take around 40 to 45 minutes.
4
Remove the squash from the oven and let it cool for a short period of time, about 7 to 10 minutes.
5
After that, decrease the oven temperature to 350 degrees Fahrenheit (or 175 degrees Celsius).
6
Now, carefully remove the cooked squash from its skin and separate it into individual strands using a fork.
7
Next, reserve the empty squash shells.
8
In a separate pan, cook the beef, onion, and bell pepper over medium heat until the meat is no longer pink, which should take around 5 minutes.
9
Drain any excess water from the pan and then stir in garlic, basil, oregano, salt, and pepper.
10
Continue cooking the mixture for another 2 minutes, until it becomes fragrant.
11
Then, add tomatoes to the pan and cook until they are warmed through, about 2 minutes.
12
After that, stir in the cooked squash and continue cooking until all the liquid has evaporated, which should take around 10 minutes.
13
Now, use a slotted spoon to fill the empty squash shells with the squash mixture.
14
Place the filled squash shells in a shallow baking dish.
15
Then, put the squash shells back in the preheated oven and bake until all the flavors have combined, which should take around 15 minutes.
16
Finally, sprinkle some Cheddar cheese over the top of the squash and bake until it is melted, about 5 minutes.
