- 2 celery, diced

In a medium-sized cooking vessel, heat water to its boiling point. Introduce the white rice into the pot and continue heating until it reaches a boil again. Gradually decrease the heat to a low setting, cover the pot with a lid, and let it cook for approximately 20 minutes or until the rice becomes tender.\nIn a small, shallow cooking pan, heat a tiny amount of sesame oil over medium heat. Use a spatula to mix the eggs in the pan until they are fully scrambled and cooked.\nIn a larger cooking vessel, heat some sesame oil over medium-high heat. Add sliced onions and chopped celery to the pan and stir until they are lightly browned. Introduce the remaining ingredients, including shrimp, carrots, red pepper, pea pods, and green pepper, into the pan. Stir in the cooked white rice to combine. If desired, add a few drops of soy sauce to taste. Finally, incorporate the scrambled eggs into the mixture and stir until everything is heated through and well combined.
